  • 3 pounds Fresh Strawberries hulled and quartered
  • 1 cup Granulated Sugar can substitute light brown sugar
  • 1/4 cup Cornstarch to thicken filling
  • 1 tablespoon Lemon Zest or use orange zest
  • 2 teaspoons Lemon Juice or substitute with apple cider vinegar
  • 1 teaspoon Vanilla Extract can substitute with almond extract
  • 1/4 teaspoon Salt
For the Top
  • 1 tablespoon Milk for brushing on crust
  • 1 tablespoon Coarse Sugar optional for topping

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Roll out three pie crusts on a floured surface into a large rectangle, approximately 17×12 inches. Fit into a jelly roll pan.
  3. In a large mixing bowl, combine hulled strawberries, granulated sugar, cornstarch, lemon juice, lemon zest, vanilla extract, and salt.
  4. Pour the strawberry filling into the prepared crust, and top with decorative crust shapes.
  5. Brush the top crust with milk, sprinkle with coarse sugar, and bake for 45-50 minutes.
  6. Allow the pie to cool completely in the pan before slicing and serving.
