Step-by-Step Instructions
  1. Wash and dry 3–4 ripe peaches. Cut in half, remove pits, and dice into 1/4 inch pieces. Place diced peaches in a large mixing bowl.
  2. Finely dice 1 red bell pepper, 1 small red onion, and 1 jalapeño pepper. Combine with peaches in the same bowl.
  3. Chop a handful of fresh cilantro and sprinkle it into the bowl just before serving.
  4. In a small bowl, whisk together the juice of 1 lime, 1-2 tablespoons of honey, and a pinch of salt.
  5. Pour the dressing over the peach and vegetable mixture. Gently toss until evenly coated.
