Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a large casserole dish.
  2. Spread an even layer of uncooked long-grain white rice across the bottom of the greased casserole dish.
  3. Place your seasoned chicken breasts or thighs directly on top of the rice, lightly season with salt and pepper.
  4. In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, and lemon juice. Stir until well-blended.
  5. Spoon the tzatziki sauce over the chicken and rice layers in the casserole dish, then pour chicken broth evenly over it.
  6. Cover the dish tightly with aluminum foil and bake for 45 to 50 minutes.
  7. Remove the foil and allow it to rest for a few moments before serving warm, garnished if desired.
