Ingredients
  

For the Rice
  • 2 cups uncooked rice can substitute with quinoa or cauliflower rice
For the Beef
  • 1 lb lean ground beef or ground turkey/chicken
  • 1 tbsp brown sugar can replace with coconut sugar
  • 1 tbsp hoisin sauce can substitute with soy sauce and honey
  • 2 tbsp soy sauce tamari for gluten-free
  • 1 tbsp sriracha sauce adjust based on spice tolerance
  • 1 tbsp grated fresh ginger or use 1/4 tsp ground ginger
  • 2 cloves minced garlic or 1/4 tsp garlic powder
For the Vegetables
  • 1 cup red bell pepper can use any bell pepper or snap peas
For Garnishing
  • 2 tbsp scallions can substitute with chopped cilantro or crushed peanuts
  • 1 tbsp sesame seeds

Method
 

Cooking Instructions
  1. Cook the rice according to the package instructions, usually around 15-20 minutes. Bring water to a boil, add rice, lower the heat, and cover to simmer until fluffy.
  2. In a large skillet, heat over medium-high heat. Add the lean ground beef and cook for 8-10 minutes, breaking it apart until browned.
  3. Once the beef is cooked, drain excess fat if necessary. Stir in brown sugar, hoisin sauce, soy sauce, sriracha, ginger, and garlic, mixing well.
  4. Return the skillet to medium heat. Add chopped red bell pepper and sauté for 2-3 minutes until the peppers are tender-crisp.
  5. Serve the beef mixture over the cooked rice, drizzling extra sauce on top. Garnish with scallions and sesame seeds.
