Step‑by‑Step Instructions for Mediterranean Chicken Stir Fry
  1. Prep all ingredients: chop zucchini, red bell pepper, red onion, slice chicken breast, mince garlic, and halve cherry tomatoes.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken breast for 5-7 minutes until golden brown. Remove and set aside.
  3. In the same skillet, sauté red onion and garlic for 1-2 minutes. Add zucchini and red bell peppers, cooking for 4-5 minutes.
  4. Return the cooked chicken to the skillet, toss to combine, and let cook for another 2-3 minutes.
  5. Drizzle lemon juice over the stir fry, add cherry tomatoes, olives, and feta cheese; mix well and heat through for 1 minute.
