Preparation
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and equipment, including a large jelly roll pan.
  2. Take three pie crusts and stack them, roll into a large rectangle (17x12 inches), and press into jelly roll pan.
  3. In a large bowl, combine strawberries, sugar, cornstarch, lemon juice, lemon zest, vanilla extract, and salt, stirring gently.
  4. Pour the strawberry filling into the crust-lined pan. Roll out the remaining crust, cut into shapes or strips, and place atop the filling.
  5. Brush the top crust with milk and sprinkle coarse sugar if desired. Bake for 45-50 minutes until golden crust and bubbling filling.
  6. Cool completely on a wire rack before slicing and serving at room temperature or chilled.
