Ingredients
  

Biscuit Dough
  • 1/2 cup shortening ensure it’s very cold
  • 1/4 cup unsalted butter cubed and very cold
  • 2 cups peaches diced; canned or frozen is fine
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk use cold
Glaze
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1 large egg for egg wash
  • 2 tbsp melted butter for brushing

Method
 

Biscuit Preparation
  1. Start by placing your shortening and cubed unsalted butter in the freezer for at least 30 minutes.
  2. While the fats are chilling, dice your fresh peaches into small pieces and remove excess moisture.
  3. In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and powdered sugar.
  4. Remove the cold shortening and butter from the freezer and add them to the dry ingredients, cutting them in.
  5. Gently fold your prepared peaches into the flour mixture, then pour in the cold buttermilk.
  6. On a lightly floured surface, turn out the dough and gently knead it a few times.
  7. Using a biscuit cutter, cut out rounds from the dough and transfer them to a baking sheet.
  8. While the biscuits chill, preheat your oven to 450°F (232°C).
  9. In a small bowl, whisk together the egg and milk to create an egg wash.
  10. Place the prepared biscuits in the preheated oven and bake for 15-18 minutes.
  11. As the biscuits bake, whisk together the glaze ingredients.
  12. Once baked, allow the biscuits to cool slightly, then brush with melted butter and drizzle the glaze.
