  • 1 teaspoon Garlic Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt kosher or sea salt
  • 1 tablespoon Honey or agave syrup
  • 2 tablespoons Avocado Oil or canola oil
For the Salad Base
  • 2 cups Chicken Breasts grilled
  • 4 cups Green Leaf Lettuce washed
  • 1 cup Tomatoes chopped
  • 1 can Black Beans rinsed and drained
  • 1 each Red Bell Pepper diced
  • 1 each Avocados diced
  • 1 cup Corn canned or frozen
  • 1/2 each Red Onion sliced
  • 1 cup Tortilla Strips
  • 1/4 cup Cilantro chopped
  • 1 each Lime Wedges for serving
For the Dressing
  • 1/2 cup Ranch Dressing
  • to taste Hot Sauce

Method
 

Step-by-Step Instructions
  1. Marinate the chicken by mixing lime juice, lime zest, garlic powder, cumin, chili powder, salt, honey, and avocado oil. Coat chicken and refrigerate for 8 to 24 hours.
  2. Preheat a grill pan over medium heat. Grill marinated chicken for 5–6 minutes per side until cooked through.
  3. Prepare the dressing by combining ranch dressing with hot sauce in a bowl until smooth.
  4. Assemble salad with lettuce, grilled chicken slices, tomatoes, black beans, bell pepper, avocado, corn, and red onion. Top with tortilla strips.
  5. Garnish with cilantro and lime juice before serving. Enjoy!
