Ingredients
  

For the Salsa
  • 2-3 pieces yellow peaches ripe, diced
  • 1-2 cups cherries pitted and halved
  • 1 piece jalapeño finely chopped, seeds removed
  • ¼ cup red onion finely diced
  • 1-2 cloves garlic minced
  • 1 handful cilantro fresh, chopped
  • 1-2 tablespoons lime juice freshly squeezed
  • 1 teaspoon lime zest from one lime
  • 1 pinch sea salt to taste

Method
 

Preparation Steps
  1. Begin by mincing 1-2 cloves of garlic until finely chopped.
  2. Dice 2-3 ripe peaches into ½-inch pieces and place them in a mixing bowl.
  3. Halve and pit 1-2 cups of cherries and add them to the bowl.
  4. Finely chop a handful of cilantro and add to the bowl.
  5. Remove seeds from 1 jalapeño and finely chop it, then add to the bowl.
  6. Finely dice ¼ cup of red onion and add it to the bowl.
  7. Juice 1-2 limes and zest one lime, adding both to the mixture.
  8. Gently fold all ingredients together to blend flavors.
  9. Sprinkle a pinch of sea salt and fold the mixture once more.
  10. Cover and refrigerate for at least 15 minutes before serving.
  11. Serve at room temperature with tortilla chips or on grilled meats.
