- Begin by heating a large cast iron skillet over medium heat. Once hot, pour in a tablespoon of olive oil along with two tablespoons of ghee.
- Add the cubed Yukon Gold potatoes and sprinkle in minced garlic, dried thyme, oregano, sea salt, and black pepper. Cook for 8-10 minutes until golden brown and crispy.
- Increase heat to medium-high and add the remaining tablespoon of ghee. Sear the seasoned sirloin steak cubes for 2 minutes without stirring.
