For the Chicken
  • 1.5 lb skinless boneless chicken thighs or chicken breasts
  • 1 teaspoon dried oregano or fresh oregano
  • 1 teaspoon paprika smoked paprika for extra flavor
  • ¼ teaspoon salt season to taste
  • ¼ teaspoon red pepper flakes omit for a milder dish
For Cooking
  • 2 tablespoons olive oil plus 1 tablespoon for rice
For the Rice and Veggies
  • 8 oz grape tomatoes halved
  • 5 cloves garlic minced
  • 5 oz fresh spinach chopped
  • 3 tablespoons lemon juice fresh
For the Base
  • 2 cups cooked jasmine rice or brown rice
  • 15 oz chickpeas (canned) drained
For the Creaminess
  • 6 oz feta cheese diced; or vegan feta
  • optional fresh oregano for garnish

Cooking Instructions
  1. Begin by seasoning the chicken thighs with oregano, paprika, salt, and red pepper flakes.
  2. Heat olive oil in a skillet and cook the chicken until golden brown.
  3. In the same skillet, sauté tomatoes, garlic, oregano, and salt.
  4. Add spinach and mix in cooked rice and chickpeas.
  5. Combine feta with olive oil and lemon juice in a bowl.
  6. Mix half of the feta into the rice, top with chicken and remaining feta, garnish with oregano.
