For the Filling
  • 1 pound ground lamb or beef ground chicken can be used as a substitute
  • 1 small red onion finely chopped shallots can be used for a milder taste
  • 2 cloves garlic adjust according to your taste
  • 1 handful flat-leaf parsley cilantro or mint can be used for a twist
  • 1 medium tomato grated for smoother consistency
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon allspice
  • 1 teaspoon ground cinnamon
  • to taste salt
  • to taste black pepper
  • 2 tablespoons olive oil extra virgin oil is best
  • 4 pieces Lebanese-style pita breads flour tortillas can be a substitute
Optional Additions
  • 1 cup Gruyere cheese for a creamy flavor
  • 1 cup Rao's sauce or any tomato sauce

Method
 

Step-by-Step Instructions
  1. Combine ground lamb or beef, diced onion, minced garlic, and grated tomato in a mixing bowl.
  2. Add chopped parsley, cumin, coriander, paprika, allspice, cinnamon, salt, and pepper. Mix until just combined.
  3. Cut Lebanese-style pita breads in half to create pockets and fill with the meat mixture.
  4. Brush the outside of each filled pocket with olive oil using a pastry brush.
  5. Preheat the grill and grill the pita pockets for about 3-4 minutes on each side.
  6. Serve warm, optionally with dips like hummus or tabbouleh.
