- Combine ground lamb or beef, diced onion, minced garlic, and grated tomato in a mixing bowl.
- Add chopped parsley, cumin, coriander, paprika, allspice, cinnamon, salt, and pepper. Mix until just combined.
- Cut Lebanese-style pita breads in half to create pockets and fill with the meat mixture.
- Brush the outside of each filled pocket with olive oil using a pastry brush.
- Preheat the grill and grill the pita pockets for about 3-4 minutes on each side.
