- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add 1 lb of ground beef. Cook until browned, about 7-10 minutes.
- Add the diced yellow bell pepper, chopped yellow onion, and finely chopped Bella mushrooms to the skillet. Cook for an additional 5-7 minutes until tender.
- Mix in the sauce ingredients: add tomato sauce, sugar-free ketchup, minced garlic, Worcestershire sauce, brown sugar, dry mustard, and onion powder. Cook for 3-5 minutes until bubbling.
- In a prepared baking dish, layer the cooked beef mixture and sprinkle shredded Colby Jack cheese over the top.
- Open the can of buttermilk biscuits, cut each biscuit into quarters, and evenly distribute over the cheesy mixture.
- Bake for 25 minutes or until the biscuit topping is golden brown.
