  • 1 pound Italian Sausage preferably spicy or sweet based on preference
  • 1 small Onion diced
  • 3 cloves Garlic minced
  • 4 cups Chicken Broth
  • 2 cups Kale or Spinach chopped
  • 2 pounds Potatoes Yukon Gold or Russet, diced
  • 1 cup Heavy Cream or half-and-half for a lighter option
  • 1 tablespoon Olive Oil
  • to taste Salt and Black Pepper
  • 1/4 teaspoon Red Pepper Flakes optional
For Topping
  • 1/2 cup Parmesan Cheese grated

Method
 

Steps
  1. Heat a large pot or Dutch oven over medium heat and cook the Italian sausage for 5-7 minutes until browned.
  2. Add diced onion and sauté for 3-4 minutes until translucent, then stir in minced garlic and cook for 30 seconds.
  3. Add diced potatoes and chicken broth to the pot, increase heat to bring to a boil, then reduce to a simmer for about 15 minutes.
  4. Stir in heavy cream and chopped kale or spinach, then simmer for an additional 5 minutes or until the greens wilt.
  5. Season with salt, black pepper, and optional red pepper flakes, then garnish with grated Parmesan and serve.
