Method
 

Step‑by‑Step Instructions
  1. In a small bowl, combine smoked paprika, brown sugar, salt, garlic powder, onion powder, chili powder, mustard powder, celery salt, black pepper, allspice, cayenne pepper, and cornstarch. Mix these ingredients thoroughly until well blended.
  2. Take your chicken breast or thighs and cut them into uniform 1-inch cubes. Place the chicken pieces into a resealable bag, then sprinkle in the prepared dry rub. Seal the bag and shake it gently until the chicken is evenly coated.
  3. In a large skillet, heat 1.5 tablespoons of olive oil over medium-high heat until shimmering.
  4. Carefully add the seasoned chicken pieces to the hot skillet in batches, letting them cook undisturbed for 5-8 minutes until golden brown.
  5. Once the chicken bites are golden and cooked through, transfer them to a serving platter.
