Method
 

Cooking Instructions
  1. Heat a non-stick skillet over medium heat for about 2 minutes.
  2. In a mixing bowl, combine shredded rotisserie chicken, Greek yogurt, and dried herbs.
  3. Place one low-carb tortilla in the heated skillet and warm for about 30 seconds.
  4. Spread half of the chicken mixture over the tortilla and sprinkle with shredded cheese.
  5. Top with another tortilla and cook for 3-4 minutes until the bottom is golden.
  6. Flip the quesadilla and cook for an additional 3-4 minutes until golden brown.
  7. Remove from skillet, let cool slightly, then slice into triangles.
