- In a mixing bowl, whisk together honey, lime juice, soy sauce, minced garlic, grated ginger, salt, and pepper until well combined. Add the chicken pieces, tossing to coat. Cover and marinate for at least 20 minutes.
- In a medium saucepan, combine the rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18 minutes.
- Fluff the rice with a fork and fold in diced avocado, chopped cilantro, and thinly sliced red onion. Squeeze additional lime juice over the mixture.
- Heat a large skillet over medium heat, add oil, then add the marinated chicken. Sauté for 7-10 minutes until browned and cooked through.
- On a plate, spoon the cilantro lime rice, layer the cooked chicken on top, and garnish with cilantro and a lime wedge.
