Marination
  1. In a large mixing bowl, combine coconut milk, soy sauce, brown sugar, minced garlic, grated ginger, lime juice, turmeric powder, and chili powder. Stir until well mixed. Add the boneless skinless chicken thighs, ensuring they are completely coated in the marinade. Cover the bowl and let the chicken marinate in the refrigerator for at least 6-8 hours, or overnight for the best flavor infusion.
Cooking
  1. Once the chicken is marinated, preheat your air fryer to 400°F (200°C). Allow the air fryer to fully heat for about 5 minutes before the chicken is added.
  2. Carefully place the marinated chicken thighs in a single layer in the air fryer basket. Cook at 400°F (200°C) for 25-30 minutes, flipping the chicken halfway through. Check that the internal temperature reaches 165°F (74°C) and the exterior is golden brown and crispy.
  3. Once cooked, remove the chicken from the air fryer and let it rest for a few minutes. Garnish with freshly chopped coriander and serve hot.
