For the Cake
  • 1 cup All-Purpose Flour spoon and level for accuracy
  • 1 tablespoon Ceremonial Grade Matcha Powder or culinary grade if unavailable
  • 1 teaspoon Baking Powder ensure it's fresh
  • 1 teaspoon Baking Soda ensure it's fresh
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted Butter softened
  • 1 cup Granulated White Sugar
  • 2 Eggs room temperature
  • 1 teaspoon Vanilla pure extract preferred
  • 1 cup Buttermilk or made with milk and lemon juice
For the Matcha Latte Soak
  • 1 tablespoon Matcha Powder
  • 1/2 cup Water
  • 1 cup Whole Milk or substitute with almond/oat milk
  • 1/4 cup Sweetened Condensed Milk adjust to taste
For the Strawberry Cream Cheese Frosting
  • 1/2 cup Unsalted Butter softened
  • 8 ounces Cream Cheese chilled
  • 2 cups Powdered Sugar adjust to preferred sweetness
  • 1/2 cup Freeze-Dried Strawberries or substitute with strawberry puree

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9x9 inch baking pan.
  2. In a bowl, whisk together the flour, matcha powder, baking powder, baking soda, and salt.
  3. Cream together butter and sugar until fluffy, add eggs one at a time, then add vanilla.
  4. Mix in the dry ingredients gradually with buttermilk, avoiding over-mixing.
  5. Pour batter into the pan and bake for 38-42 minutes, until a toothpick comes out clean.
  6. Prepare the matcha soak by whisking together matcha powder, water, milk, and condensed milk.
  7. Beat together softened butter and cream cheese, then mix in powdered sugar and strawberries for frosting.
  8. Poke holes in the cooled cake and pour the matcha soak over it to infuse flavor.
  9. Spread frosting over the soaked cake, slice, and serve.
