Caramelize Onions
- Melt 2 tablespoons of unsalted butter in a cast iron skillet over low heat. Add thinly sliced large sweet onions and cook for about 30 minutes until golden and caramelized.
Prepare Sauce
- Combine mayonnaise, ketchup, yellow mustard, garlic powder, and ground black pepper in a mixing bowl. Stir until smooth.
Cook Burger Patties
- Wipe the skillet clean and reheat over medium-high heat. Melt another 2 tablespoons of butter, then cook the burger patties according to package instructions.
Assemble Sandwiches
- Spread sauce on one side of each slice of bread. Layer caramelized onions, a hot burger patty, cheddar, and Swiss on four slices. Top with remaining slices, sauce side down.
Grill Sandwiches
- Melt 2 tablespoons of butter in the skillet over medium heat. Grill assembled sandwiches until golden brown and crispy, about 3-4 minutes per side.
