Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a large oven-safe skillet over medium heat until crispy, about 6-8 minutes. Remove and drain on paper towels, leaving the fat in the skillet.
  3. Sauté the diced potatoes in the bacon fat on medium heat for 8-10 minutes until golden brown and tender, stirring occasionally.
  4. In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
  5. Pour the egg mixture over the cooked potatoes and sprinkle with bacon pieces and cheddar cheese on top.
  6. Place the skillet back on the stovetop over medium heat for 3 minutes to set the edges.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes until puffed and lightly golden.
  8. Remove from the oven and let rest for 5 minutes. Garnish with fresh chives before serving.
