Method
 

Cook the Bacon
  1. In a skillet over medium heat, cook the bacon until crispy, about 6–8 minutes. Transfer to paper towels to drain excess grease.
Caramelize the Onions
  1. Remove excess grease from the skillet, add sliced onions, and cook over medium heat for 10–15 minutes until golden brown. Add Irish stout and simmer until reduced by half.
Prepare the Burger Patties
  1. In a mixing bowl, combine ground beef, Worcestershire sauce, salt, and pepper. Form into four patties.
Cook the Patties
  1. Heat skillet or grill to medium-high. Cook patties for 3–4 minutes each side until well-done at 160°F. Add cheese in the last minute to melt.
Make the Sauce
  1. Whisk together sour cream and Dijon mustard until smooth, adding a pinch of salt to taste.
Toast the Buns
  1. Add butter to the skillet and toast buns cut-side down for 2-3 minutes until golden.
Assemble the Burgers
  1. Layer bottom bun with patty, melted cheese, caramelized onions, bacon, and sauce. Top with the other bun.
