Method
 

Directions
  1. Preheat your oven to 400°F (200°C) and gather your baking tools.
  2. Unroll the refrigerated pie crust on a lightly floured surface and roll it into a 12-inch circle.
  3. In a mixing bowl, combine lemon juice and vanilla extract, whisk in cornstarch, then add sugars and cinnamon.
  4. Place the peach mixture in the center of the pie crust, leaving a 2-inch border and fold the edges over the fruit.
  5. Dot with butter, brush the egg wash over the crust edges, and sprinkle with coarse sugar.
  6. Bake in the preheated oven for 25-30 minutes until golden brown and bubbly.
  7. Cool for about 5 minutes, cut into wedges and serve warm.
