Ingredients
  

For the Chickpeas
  • 1 tablespoon Olive Oil can replace with vegetable or canola oil
  • 15 oz Cooked Chickpeas canned, rinsed well
For the Sauce
  • 3 tablespoons Soy Sauce or Tamari tamari is gluten-free
  • 2 tablespoons Maple Syrup substitute with agave nectar if needed
  • 1 tablespoon Rice Vinegar apple cider vinegar works as a substitute
  • 1 tablespoon Toasted Sesame Oil
  • 1 tablespoon Cornstarch arrowroot can be used as a gluten-free alternative
Aromatics
  • 1 medium Onion diced, can substitute with shallots
  • 2 cloves Garlic fresh minced
For Garnishing
  • 2 tablespoons Sesame Seeds toasted for better flavor
  • 2 medium Green Onions chopped, can substitute with chives
  • Salt to taste
  • Pepper to taste
For Serving
  • 3 cups Cooked Rice or Quinoa as a base for the dish

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 1 diced onion and sauté for 3–4 minutes until translucent and soft.
  2. Stir in 2 minced garlic cloves and sauté for an additional 1–2 minutes until fragrant.
  3. In a small bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of maple syrup, 1 tablespoon of rice vinegar, and 1 tablespoon of toasted sesame oil.
  4. Pour the sauce mixture into the skillet, stirring to coat the sautéed onion and garlic. Cook for 1 minute.
  5. In another bowl, dissolve 1 tablespoon of cornstarch in 2 tablespoons of water. Add to the skillet while stirring continuously.
  6. Add 15 ounces of cooked chickpeas to the skillet, tossing gently to coat them in the sauce. Allow to simmer for 5–7 minutes on low heat.
  7. Once heated, sprinkle in 2 tablespoons of toasted sesame seeds and 2 chopped green onions, stirring to combine.
  8. Serve the Vegan Sticky Sesame Chickpeas hot over a bed of cooked rice or quinoa.

Notes

For deeper flavor, marinate the cooked chickpeas in the sauce for about 30 minutes before cooking. Store in an airtight container in the fridge for up to 3 days. Freeze for longer storage.
