- Cook the chopped bacon in a large pot over medium-high heat for about 10 minutes until crispy and golden brown. Transfer to a paper towel-lined plate, leaving the fat in the pot.
- Add the chopped onion, celery, and carrots to the pot. Sauté for about 5 minutes until softened and onion is translucent.
- Stir in minced garlic and cook for an additional 30 seconds.
- Whisk in flour into the mixture for about 1 minute to create a roux.
- Gradually pour in the chicken broth while stirring vigorously. Scrape any brown bits from the bottom of the pot.
