Step-by-Step Instructions for Creamy Corn Chowder
  1. Cook the chopped bacon in a large pot over medium-high heat for about 10 minutes until crispy and golden brown. Transfer to a paper towel-lined plate, leaving the fat in the pot.
  2. Add the chopped onion, celery, and carrots to the pot. Sauté for about 5 minutes until softened and onion is translucent.
  3. Stir in minced garlic and cook for an additional 30 seconds.
  4. Whisk in flour into the mixture for about 1 minute to create a roux.
  5. Gradually pour in the chicken broth while stirring vigorously. Scrape any brown bits from the bottom of the pot.
  6. Stir in heavy cream, corn, diced potatoes, Italian seasoning, cayenne pepper, and most of the bacon. Reduce heat.
  7. Allow the chowder to simmer uncovered for 15-20 minutes until potatoes are tender.
