- Preheat your oven to 375°F (190°C).
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat and sauté the sliced kielbasa for 5–7 minutes until browned.
- Add another tablespoon of olive oil if needed and sauté the diced onion for 3–4 minutes until translucent. Add minced garlic and cook for another minute.
- In a mixing bowl, combine the sour cream, heavy cream, paprika, salt, and black pepper, and mix until smooth.
- Lightly grease a 9x13-inch baking dish and layer half of the sliced potatoes at the bottom, followed by half of the kielbasa, onion, garlic mixture, and cheddar cheese.
- Repeat the layering with the remaining ingredients and finish with the remaining cheese on top.
- Cover the baking dish with aluminum foil and bake for 40 minutes.
- Remove the foil and bake for an additional 10–15 minutes until cheese is bubbly and golden brown.
- Let cool for about 5–10 minutes before serving.
- Garnish with chopped parsley and serve warm.
