- In a small bowl, whisk together ½ cup of mayonnaise, 2 tablespoons of mustard, and 2 tablespoons of maple syrup until smooth. Set aside.
- Heat a skillet over medium heat and cook thick-cut bacon for 4–5 minutes on each side until crispy. Remove and drain on paper towels, then break into halves.
- In the same skillet, add maple breakfast sausage patties and cook for 8–10 minutes until browned. Remove and let rest.
- Whisk together 4 eggs, 2 tablespoons of milk, and a pinch of salt and pepper. Heat a non-stick skillet and scramble the mixture for 3–4 minutes until fluffy and creamy.
- Preheat oven to 350°F (175°C) and slice croissants in half. Line them on a baking sheet and warm in the oven for 3–4 minutes.
- Spread the maple mustard sauce on the bottom half of each croissant. Layer scrambled eggs, sausage, and bacon, followed by shredded cheese.
- Return sandwiches to the oven for 1–2 minutes until the cheese melts. Watch closely!
- Remove and cap with the top halves of the croissants. Optionally sprinkle with chives and serve immediately.
