Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together ½ cup of mayonnaise, 2 tablespoons of mustard, and 2 tablespoons of maple syrup until smooth. Set aside.
  2. Heat a skillet over medium heat and cook thick-cut bacon for 4–5 minutes on each side until crispy. Remove and drain on paper towels, then break into halves.
  3. In the same skillet, add maple breakfast sausage patties and cook for 8–10 minutes until browned. Remove and let rest.
  4. Whisk together 4 eggs, 2 tablespoons of milk, and a pinch of salt and pepper. Heat a non-stick skillet and scramble the mixture for 3–4 minutes until fluffy and creamy.
  5. Preheat oven to 350°F (175°C) and slice croissants in half. Line them on a baking sheet and warm in the oven for 3–4 minutes.
  6. Spread the maple mustard sauce on the bottom half of each croissant. Layer scrambled eggs, sausage, and bacon, followed by shredded cheese.
  7. Return sandwiches to the oven for 1–2 minutes until the cheese melts. Watch closely!
  8. Remove and cap with the top halves of the croissants. Optionally sprinkle with chives and serve immediately.
