Step-by-Step Instructions
  1. Start by rinsing the garlic chives under cold water. Cut them into 2-inch lengths and place them in a large mixing bowl. Peel and julienne the Korean radish and carrot. Thinly slice the garlic.
  2. Sprinkle the Korean chili flakes over the chopped vegetables in the mixing bowl. Toss to evenly coat the veggies.
  3. In a medium saucepan, combine the rice vinegar, water, sugar, salt, and fish sauce. Heat until dissolved, about 3-5 minutes. Cool to room temperature.
  4. Pack the vegetables tightly into a clean glass jar, pressing down to eliminate air pockets.
  5. Pour the cooled brine over packed vegetables. Ensure all vegetables are submerged in the brine.
  6. Seal the jar tightly and refrigerate. Let the pickles marinate for 2-3 days for best flavor.
