Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C).
  2. Heat a large, heavy-duty pot over medium-high heat and add vegetable oil. Sear the beef chuck roast for about 4–5 minutes per side until browned.
  3. Remove the roast and sauté diced sweet onion, minced garlic, and grated fresh ginger for 2–3 minutes until translucent.
  4. Stir in gochujang, brown sugar, and soy sauce, simmer for 2 minutes, then add beef broth and scrape browned bits from the pot.
  5. Return the roast to the pot, cover, and bake for 2–3 hours until fork-tender, adding more broth if necessary.
  6. Remove from oven and let rest for 15 minutes covered before slicing and serving.
