Preparation
- Preheat your oven to 375°F (190°C).
- Slice the zucchini into thin rounds, about a quarter-inch thick, and sprinkle with salt. Allow to rest for 10 minutes.
- In a mixing bowl, combine ricotta cheese, dried basil, dried oregano, garlic powder, salt, and pepper. Stir until smooth.
- Heat olive oil in a skillet over medium heat. Sauté the salted zucchini for about 3-4 minutes until slightly softened.
- In a baking dish, layer ample marinara sauce, sautéed zucchini, ricotta mixture, and mozzarella. Repeat layers, finishing with mozzarella on top.
- Cover with aluminum foil and bake for 20 minutes. Remove foil and bake an additional 5-10 minutes until cheese is bubbly and golden.
- Let cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
