For the Sauce and Seasoning
  • 2 cups Marinara Sauce Use homemade or store-bought, opting for low-sugar versions if desired.
  • 1 tsp Dried Basil Fresh basil can be used, just adjust quantity.
  • 1 tsp Dried Oregano Swap with Italian seasoning for convenience.
  • 1 tsp Garlic Powder Fresh garlic could be added for a stronger taste.

  • 1/2 tsp Black Pepper Freshly cracked is more flavorful.
For Garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini into thin rounds, about a quarter-inch thick, and sprinkle with salt. Allow to rest for 10 minutes.
  3. In a mixing bowl, combine ricotta cheese, dried basil, dried oregano, garlic powder, salt, and pepper. Stir until smooth.
  4. Heat olive oil in a skillet over medium heat. Sauté the salted zucchini for about 3-4 minutes until slightly softened.
  5. In a baking dish, layer ample marinara sauce, sautéed zucchini, ricotta mixture, and mozzarella. Repeat layers, finishing with mozzarella on top.
  6. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake an additional 5-10 minutes until cheese is bubbly and golden.
  7. Let cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
