Method
 

Step-by-Step Instructions
  1. Cook the pasta in a large pot of salted boiling water according to package instructions (about 10-12 minutes). Drain and set aside.
  2. Sauté the seasoned chicken in olive oil for about 6-7 minutes on each side until golden brown and cooked through. Remove and let rest.
  3. In the same skillet, sauté zucchini, yellow squash, and minced garlic for about 4-5 minutes until tender.
  4. Add butter and fresh lemon juice to the veggies, stirring to create a sauce.
  5. Slice the chicken and combine it with the pasta and the sauce in the skillet, tossing to coat.
  6. Garnish with chopped parsley and serve immediately.
