  • 1 lb Asparagus, trimmed
  • 2 tbsp Olive oil Extra virgin recommended.
  • 4 cloves Garlic, minced Adjust to taste.
  • 1 zest Lemon For brightness and flavor.
  • 1 tbsp Lemon juice Freshly squeezed is best.

Method
 

Cooking Steps
  1. In a mixing bowl, combine shrimp, olive oil, garlic, lemon zest, and lemon juice. Season with salt and pepper. Let marinate for at least 30 minutes.
  2. Heat a skillet over medium-high heat. Add the asparagus and sauté for about 3 minutes until bright green and slightly tender.
  3. Push the asparagus to one side of the skillet and add the marinated shrimp to the other side.
  4. Cook shrimp for about 3-4 minutes on each side until they turn pink and opaque.
  5. Serve hot, garnish with additional lemon slices if desired.
