Ingredients
  

Dough
  • 4 cups All-Purpose Flour Additional may be needed for texture
  • 2 teaspoons Instant Dry Yeast Alternatively, use active dry yeast
  • 1 teaspoon Fine Salt
  • 1 cup Buttermilk (room temperature) Or milk with lemon juice
  • 1/2 cup Granulated Sugar
  • 1/2 cup Unsalted Butter (room temperature)
  • 2 large Eggs (room temperature)
  • 2 tablespoons Fresh Lemon Zest
Filling
  • 1/2 cup Granulated Sugar
  • 1/4 cup Light Brown Sugar
  • 1/2 cup Softened Unsalted Butter
Icing
  • 2 cups Powdered Sugar
  • 2 tablespoons Fresh Lemon Juice
  • 2 tablespoons Melted Unsalted Butter

Method
 

Preparation
  1. Preheat your oven to 200°F (95°C).
  2. In a large bowl, combine all-purpose flour, instant dry yeast, and fine salt.
  3. In a separate bowl, whisk together buttermilk, granulated sugar, and melted unsalted butter until blended.
  4. Warm this mixture until it is about 110°F (43°C).
  5. Pour the wet mixture into the dry ingredients and stir to combine.
  6. Add the eggs one at a time and the lemon zest, mixing until a sticky dough forms.
  7. Knead the dough for 5-7 minutes on a floured surface until tacky but not sticky.
  8. Cover the dough with a towel and let it rest for 10-20 minutes.
  9. Prepare the filling by mixing sugars and lemon zest, then incorporate softened butter.
  10. Roll out the dough into a 12” x 18” rectangle and spread the filling evenly over it.
  11. Roll the dough tightly and cut into 12 equal pieces using dental floss.
  12. Place the rolls in a lined baking pan and cover with foil, then place them in the warm oven for 30 minutes.
  13. Preheat the oven to 350°F (175°C) after the rolls have risen.
  14. Bake for 28-32 minutes until golden brown.
  15. Whisk together icing ingredients while the rolls bake, until smooth.
  16. Once cooled for 10-20 minutes, drizzle icing over the rolls.
