  • 2 cups Powdered Sugar adjust for sweetness preference
  • 1 dash Salt
  • 2 tablespoons Fresh Lemon Zest
  • 2 tablespoons Fresh Lemon Juice
  • Milk as needed to adjust frosting consistency

Method
 

Preparation
  1. Allow butter to soften at room temperature for about 30 minutes. Zest and juice your lemons, preheating the oven to 350°F (175°C).
Mix Cookie Dough
  1. In a large mixing bowl, beat butter and sugar until light and fluffy. Add eggs, lemon juice, and zest, mixing well. Gradually incorporate flour, baking powder, and salt until a soft dough forms.
Shape Cookies
  1. Scoop tablespoon-sized portions and roll into balls. Place on lined baking sheets, flatten slightly, and leave space for spreading.
Bake & Cool
  1. Bake for 9-10 minutes until lightly golden. Cool on sheet for 3-4 minutes, then transfer to wire racks.
Prepare Frosting
  1. Beat butter and powdered sugar until creamy. Add lemon juice, zest, and a dash of salt. Adjust with milk for desired consistency.
Frost Cookies
  1. Once cookies are cool, frost them generously. Use a spatula or piping bag for decoration.
