Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and equipment.
  2. In a large skillet, heat a splash of olive oil over medium heat. Add diced onion and minced garlic, sauté for 5 minutes.
  3. Add the sliced zucchini to the skillet and cook for an additional 5-7 minutes. Season with salt, pepper, and Italian seasoning.
  4. Combine the sautéed zucchini mixture with halved cherry tomatoes, sour cream, mayonnaise, and half of the cheddar and mozzarella cheeses.
  5. Fold in the crumbled bacon (or vegetarian substitute) and transfer to a greased casserole dish.
  6. Sprinkle remaining cheddar and mozzarella over the top of the mixture.
  7. Bake for 25-30 minutes until the cheese is melted, bubbly, and golden brown.
  8. Allow to cool for a few minutes before serving, garnish with fresh parsley or chives.
