Preparation
  1. Preheat your oven to 425°F (220°C). Pat the chicken thighs dry with a paper towel.
  2. In a medium bowl, whisk together the maple syrup, Dijon mustard, minced garlic, olive oil, salt, and pepper.
  3. Toss the chicken thighs in the marinade, ensuring they are evenly coated.
  4. Peel and cube the sweet potatoes, then spread them on a large baking sheet.
  5. Place the marinated chicken thighs on the same baking sheet as the sweet potatoes and roast for about 30 minutes.
  6. Check the internal temperature of the chicken thighs; they should reach 165°F (74°C) for safety.
