- Preheat your oven to 400°F (200°C) and grease a baking dish with 1 tablespoon of olive oil.
- In the greased baking dish, arrange a layer of halved cherry tomatoes, sliced bell pepper, and zucchini.
- Drizzle the vegetables with the remaining olive oil and add minced garlic, oregano, paprika, salt, and pepper. Toss to coat.
- Nestle the white fish fillets on top of the veggies and arrange sliced lemon over the fish.
- Cover with foil and bake for 20-25 minutes, or until the fish flakes easily. Broil for 5-10 minutes if desired.
- Garnish with freshly chopped parsley before serving.
