  • 1 cup Cherry Tomatoes halved
  • 1 medium Bell Pepper thinly sliced
  • 1 medium Zucchini thinly sliced
For Flavor
  • 3 tablespoons Olive Oil divided
  • 2 cloves Garlic minced
  • 1 medium Lemon sliced
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Paprika or smoked paprika
  • Salt and Pepper to taste
For Garnish
  • Fresh Parsley chopped

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with 1 tablespoon of olive oil.
  2. In the greased baking dish, arrange a layer of halved cherry tomatoes, sliced bell pepper, and zucchini.
  3. Drizzle the vegetables with the remaining olive oil and add minced garlic, oregano, paprika, salt, and pepper. Toss to coat.
  4. Nestle the white fish fillets on top of the veggies and arrange sliced lemon over the fish.
  5. Cover with foil and bake for 20-25 minutes, or until the fish flakes easily. Broil for 5-10 minutes if desired.
  6. Garnish with freshly chopped parsley before serving.
