- In a large mixing bowl, combine chicken breasts, sliced zucchini, halved cherry tomatoes, chopped red onion, and minced garlic. Drizzle with olive oil and sprinkle in oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes. Toss until well-coated.
- Transfer the mixture to the prepared baking dish, spreading it evenly in a single layer.
- Sprinkle shredded mozzarella cheese and grated Parmesan on top.
- Cover with aluminum foil and bake for 20 minutes. This helps the chicken cook and the vegetables soften.
- After 20 minutes, remove the foil and bake for an additional 10-15 minutes or until the cheese is golden and bubbly.
