Ingredients
  

For the Chicken and Veggies
  • 4 pieces Boneless, Skinless Chicken Breasts
  • 2 medium Zucchini choose smaller zucchinis for super tenderness
  • 1 cup Cherry Tomatoes can substitute with other tomatoes if desired
  • 1 medium Red Onion yellow onion is a handy swap
  • 3 cloves Garlic minced
For the Seasoning
  • 2 tablespoons Olive Oil extra virgin preferred
  • 1 tablespoon Dried Oregano can use Italian seasoning
  • 1 tablespoon Dried Basil fresh can be used but add later
  • 1 teaspoon Smoked Paprika can omit if not available
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper adjust to taste
  • 1/2 teaspoon Red Pepper Flakes optional
For the Topping
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Parmesan Cheese optional, grated
  • 1/4 cup Fresh Parsley chopped

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil or cooking spray.
  2. In a large mixing bowl, combine chicken breasts, sliced zucchini, halved cherry tomatoes, chopped red onion, and minced garlic. Drizzle with olive oil and sprinkle in oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes. Toss until well-coated.
  3. Transfer the mixture to the prepared baking dish, spreading it evenly in a single layer.
  4. Sprinkle shredded mozzarella cheese and grated Parmesan on top.
  5. Cover with aluminum foil and bake for 20 minutes. This helps the chicken cook and the vegetables soften.
  6. After 20 minutes, remove the foil and bake for an additional 10-15 minutes or until the cheese is golden and bubbly.
  7. Let it sit for a few minutes, then garnish with chopped parsley before serving.
