Preparation Steps
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add finely chopped onion and sauté for about 5 minutes until translucent. Add minced garlic and cook for an additional 30 seconds.
- In a large mixing bowl, combine the sautéed onion and garlic with baby spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix until uniformly blended.
- Divide the mixture into 8 equal portions and shape each portion into a patty, about ½ inch thick.
- Heat the remaining olive oil in the skillet over medium-high heat. Cook the patties in batches for about 5-6 minutes on each side until golden brown.
- Transfer cooked patties to a plate lined with paper towels to drain excess oil. Serve warm garnished with dill or Greek yogurt.
