Step-by-Step Instructions
  1. In a mixing bowl, whisk together creamy peanut butter, soy sauce, honey, and vinegar or lime juice until smooth. Add sesame oil, minced garlic, fresh ginger, and chili flakes, blending well. Pour in the water or broth, stirring until well combined.
  2. Place the boneless, skinless chicken at the bottom of the slow cooker and pour over the prepared sauce, ensuring the chicken is well coated.
  3. Cover and set the slow cooker to cook on low for 4–6 hours or on high for 2–3 hours.
  4. Once cooked, use two forks to shred the chicken right in the slow cooker, stirring it into the sauce.
  5. Ladle the peanut chicken over cooked rice or noodles and top with crushed peanuts, chopped cilantro, and green onions.
