Step‑by‑Step Instructions
  1. In a medium mixing bowl, combine ½ cup mayonnaise, ½ cup sour cream, the juice of 1 lime, and 2 tablespoons taco seasoning. Whisk until smooth and creamy. Cover and chill.
  2. In a large mixing bowl, add 4 cups of coleslaw mix, 1 diced red bell pepper, and 1 diced orange bell pepper. Rinse and drain 1 can of black beans and add, along with 1 cup of corn. Stir in ¼ cup of chopped cilantro and 1 finely chopped jalapeño.
  3. Pour the chilled dressing over the salad mixture and gently toss until well coated. Garnish with additional cilantro if desired.
