Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x4 inch loaf pan with butter or non-stick spray.
- In a stand mixer, combine 1/2 cup of softened salted butter and 1 cup of white sugar. Mix on medium speed until light and fluffy, about 2-3 minutes.
- Add 2 large eggs, 1 teaspoon of vanilla extract, and 1/2 cup of milk. Mix until well combined.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Gradually mix into the wet batter until just combined.
- Toss 1 cup of blueberries with a tablespoon of flour, then gently fold into the batter.
- Pour the batter into the greased loaf pan and smooth the top. Shake gently to level.
- Bake for 50-55 minutes, until a toothpick inserted comes out mostly clean and the top is golden brown.
- Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
