Method
 

Step-by-Step Instructions
  1. Cream softened butter in a bowl until fluffy, then add granulated sugar and mix until light and creamy.
  2. Mix in minced mint, vanilla extract, mint extract, egg, and lime zest until smooth.
  3. In another bowl, whisk together flour and baking powder, then gradually mix into wet ingredients until just combined.
  4. Cover dough with plastic wrap and refrigerate for 30 to 45 minutes.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Roll out the chilled dough to 1/4 inch thick, cut out circles, and place on baking sheets with space between.
  7. Bake in the preheated oven for about 10 minutes or until edges are lightly golden.
  8. Cool cookies on sheets for about 5 minutes before transferring to a wire rack.
