- Preheat your oven to 425°F (220°C).
- Wash and chop your vegetables into uniform pieces.
- Spread the vegetables in a single layer on a large baking sheet.
- Drizzle olive oil, sprinkle oregano, minced garlic, salt, and pepper over the vegetables.
- Roast in the preheated oven for 25-30 minutes, stirring halfway.
- If using feta cheese, add it on top of the vegetables in the last 5 minutes of roasting.
