- Preheat your oven to 350°F (175°C) and gather all ingredients.
- In a large pot, heat olive oil over medium heat. Sauté diced onion and minced garlic for 3-4 minutes until translucent.
- Add fresh spinach and allow to wilt for 2-3 minutes, then stir in canned diced tomatoes and Italian seasoning. Simmer for 4-5 minutes.
- Stir in heavy cream and simmer gently for 2-3 minutes until well combined.
