  • ¼ cup fresh grated coconut Use dried coconut if fresh is unavailable.
  • 2 tablespoons chopped cilantro Parsley can be used as substitute.
  • lemon juice Use according to taste.
  • ½ teaspoon mustard seeds Optional, toast for enhanced flavor.
  • ¼ cup chopped shallots or onions Optional, can be omitted.
  • 4 tablespoons crushed peanuts or roasted sesame seeds Optional, for garnish.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine peanut oil, ginger, green chilies, cumin seeds, turmeric, red pepper flakes, and salt in a mixing bowl.
  3. Add shredded cabbage and carrots to the mixture. Toss to coat evenly.
  4. Add curry leaves and toss gently to incorporate.
  5. Spread the cabbage mixture evenly on the prepared baking sheet.
  6. Roast in the oven for 20–25 minutes, stirring halfway through.
  7. Remove from the oven, garnish with coconut and cilantro, and drizzle with lemon juice.
  8. Top with optional crushed peanuts or sesame seeds before serving.
