- Pat the chicken breasts dry and season both sides with salt, pepper, paprika, and garlic powder.
- Heat olive oil or butter in a skillet over medium-high heat and sear the chicken for 4–5 minutes on each side until golden brown. Remove and set aside.
- In a bowl, whisk together honey, Dijon mustard, and mayonnaise until smooth to create the honey mustard sauce.
- Sauté sliced mushrooms in the same skillet for 5–7 minutes until golden and fragrant, seasoning with salt and pepper.
- Preheat the oven to 375°F (190°C). Arrange the seared chicken in a baking dish, brush with honey mustard sauce, top with mushrooms, crispy bacon, and shredded cheeses.
- Bake uncovered for 15–20 minutes until chicken reaches 165°F (74°C) and cheese is bubbly.
- Remove from oven, drizzle with remaining honey mustard sauce, garnish with chopped parsley, and serve.
