  • 1 4 heavy cream

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare two baking sheets lined with parchment paper.
  2. Cream together the butter and sugar in a stand mixer until light and fluffy, about 2-3 minutes.
  3. Add the egg, lemon extract, and pink food coloring, mixing until combined.
  4. Gradually add flour and baking soda, mixing just until combined.
  5. Shape the dough into balls and flatten each to ½ inch thick on the baking sheets, spacing 2 inches apart.
  6. Bake for 9-12 minutes until edges are set and lightly golden. Cool on a wire rack.
  7. Prepare frosting by blending butter, powdered sugar, lemon juice, and cream until fluffy.
  8. Frost cookies with a piping bag once completely cool.
