  • 2 cups Ripe Mangoes Diced
  • 4 cups Green Cabbage Shredded
  • 1 cup Carrot Grated
  • 1 cup Red Bell Pepper Sliced
  • 1 medium Red Onion Thinly sliced
  • 1/4 cup Fresh Cilantro Chopped
For the Dressing
  • 1/4 cup Lime Juice Freshly squeezed
  • 2 tablespoons Honey/Maple Syrup Maple syrup for vegan option
  • 2 tablespoons Sesame Oil Can substitute with olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper

Method
 

Preparation
  1. In a large mixing bowl, combine diced ripe mangoes, shredded green cabbage, grated carrot, sliced red bell pepper, and thinly sliced red onion. Toss gently until well mixed.
  2. In a small bowl, whisk together freshly squeezed lime juice, honey (or maple syrup), sesame oil, salt, and pepper until smooth.
  3. Pour the dressing over the mango and vegetable mixture. Gently toss until well-coated.
  4. Allow the slaw to sit for 5 to 10 minutes at room temperature to let the flavors meld.
  5. Serve chilled or at room temperature in a colorful bowl.
