- In a large mixing bowl, combine diced ripe mangoes, shredded green cabbage, grated carrot, sliced red bell pepper, and thinly sliced red onion. Toss gently until well mixed.
- In a small bowl, whisk together freshly squeezed lime juice, honey (or maple syrup), sesame oil, salt, and pepper until smooth.
- Pour the dressing over the mango and vegetable mixture. Gently toss until well-coated.
