Preparation Steps
  1. Begin by rinsing 1 pound of large shrimp under cold water, pat them dry to ensure a crispy texture when fried.
  2. In a mixing bowl, combine ½ cup cornstarch, ½ cup all-purpose flour, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, and if desired, ¼ teaspoon cayenne pepper. Whisk until well blended.
  3. Toss the prepared shrimp in the dry mixture to coat each piece fully, working in small batches.
  4. Heat about ½ inch of vegetable oil over medium-high heat until shimmering, around 5 minutes.
  5. Carefully add the coated shrimp to the hot oil in batches, frying for 2-3 minutes on each side until golden brown.
  6. Using a slotted spoon, transfer the fried shrimp to a plate lined with paper towels to drain excess oil.
  7. Garnish the fried shrimp with fresh cilantro and serve with lemon wedges immediately.
